Even though we love our white rice, once in a while, the children and the grandkids will ask for something a bit different. They want that "Western food" but I always tell them, if we make it at home, it is much fresher and we can put more ingredients! No need to go to expensive restaurants when we can make high-quality food in our own kitchen. Today, I am sharing two very simple but very tasty recipes that use fresh tomatoes and basil. These two ingredients are like best friends, they always taste so good together! Whether you are making a quick lunch or a weekend dinner for the whole family, these recipes will surely make everyone happy.
Pasta with Fresh Tomato Basil Sauce
Aiyah, let me tell you, don't go and buy those pasta sauces in the glass jars from the supermarket. Those ones have so much sugar and preservatives, not good for you! When the tomatoes are very red and juicy at the market, that is the best time to make this. It is so light and the smell of the fresh basil will fill up your whole house. My secret is to use plenty of garlic—don't be shy with the garlic because it makes the oil so fragrant. This dish is perfect for those busy days when you want something fancy but you only have 20 minutes to cook.
Ingredients:
- 400g Spaghetti or Linguine (use the good quality kind)
- 500g Fresh vine-ripened tomatoes, chopped into small cubes
- 4 cloves of Garlic, minced very finely
- 1 large bunch of Fresh Basil leaves, torn by hand
- 4 tablespoons Extra Virgin Olive Oil
- Salt and black pepper to taste
- Optional: A little bit of chili flakes if you like a bit of a kick
- Grated Parmesan cheese for topping
Instructions:
- First, bring a large pot of water to a boil. Add a big pinch of salt—it should taste like the sea! Cook your pasta according to the package, but take it out 1 minute early so it is "al dente" (still has a bit of a bite).
- While the water is boiling, heat your olive oil in a big pan over medium heat. Add the minced garlic and fry it until it smells wonderful, but be careful not to burn it! If it turns black, it will taste bitter, so watch it closely.
- Add the chopped tomatoes into the pan. Stir them around and let them cook down until they become soft and start to make a natural sauce. Use your spatula to smash them a little bit.
- Season with salt, pepper, and those chili flakes if you are using them. Let it simmer for about 5 to 8 minutes.
- Once the pasta is ready, save a small cup of the pasta water, then drain the rest. Throw the pasta into the pan with the tomato sauce.
- Add the fresh basil leaves and a splash of that pasta water. Toss everything together very well so every strand of noodle is coated in the sauce.
- Serve it hot with plenty of cheese on top. So simple, right?
Italian Pizza with Tomato Sauce and Basil
Now, if you really want to impress your neighbors or your relatives, you must try making pizza from scratch. Don't be scared of the dough! It is actually very relaxing to knead the dough with your hands, like a little bit of exercise before you eat. This Italian style pizza is not like the heavy, greasy ones you get from the fast-food delivery. It has a thin, crispy crust and the topping is very simple so you can really taste the freshness of the ingredients. When you pull this out of the oven, the crust will be golden and the cheese will be bubbling—everyone will think you are a professional chef!
Ingredients:
- For the Dough: 300g All-purpose flour or Bread flour, 1 teaspoon Yeast, 1 teaspoon Sugar, a pinch of Salt, and 200ml Warm water.
- For the Sauce: 1 cup of Tomato puree or crushed canned tomatoes.
- Toping: 200g Fresh Mozzarella cheese, sliced or shredded.
- A handful of Fresh Basil leaves.
- A drizzle of Olive oil.
Instructions:
- Start with the dough. Mix the warm water, sugar, and yeast in a bowl. Let it sit for 5 minutes until it becomes bubbly.
- In a large bowl, mix the flour and salt. Pour in the yeast mixture and stir until it forms a ball.
- Put the dough on a clean table and knead it for about 10 minutes. It should become very smooth and stretchy. Place it in a bowl, cover it with a damp cloth, and let it rest in a warm place for 1 hour until it doubles in size.
- Preheat your oven to the hottest setting it can go—usually around 220°C or 250°C. If you have a pizza stone, use it!
- After the dough has risen, punch the air out and divide it into two balls. Roll them out very thin into a circle shape.
- Spread a thin layer of tomato sauce on the dough, leaving a little space at the edge for the crust.
- Add your mozzarella cheese evenly. Don't put too much, or it will be too oily!
- Bake in the oven for about 10 to 12 minutes until the edges are brown and crispy.
- The moment you take it out, put the fresh basil leaves on top and drizzle a little olive oil. The heat from the pizza will make the basil smell amazing. Cut it into slices and eat while it's hot!
