Hello, my dear friends and fellow food lovers! How are you all doing today? I hope your kitchens are filled with the wonderful aroma of something delicious. Today, I am so excited to share with you two versions of a cake that is very close to my heart. You know, in our culture, we really love our butter cakes—especially the ones that are very rich, moist, and perfect for sharing with family during tea time. These sour cream butter cakes are truly "solid" and so satisfying. If you are looking for that perfect melt-in-the-mouth texture to serve your guests or just to enjoy with a hot cup of coffee, you must try these recipes!
Sour Cream-Butter 'Gain a Pound' Cake
This first recipe is a real classic, and the name "Gain a Pound" really says it all, haha! It is so rich and buttery that you might worry about your waistline, but honestly, one bite and you will forget everything. The secret here is the combination of high-quality butter and sour cream, which creates a very fine crumb. It’s the kind of cake that stays moist for days, if it even lasts that long in your house! My children always ask for a second slice before I even finish cutting the first one. It is very simple to make but tastes like it came from a high-end bakery.
Ingredients:
- 1 ½ cups unsalted butter, softened to room temperature (don't use cold butter, ya!)
- 3 cups granulated sugar
- 6 large eggs, room temperature
- 3 cups all-purpose flour, sifted
- ½ teaspoon salt
- ¼ teaspoon baking soda
- 1 cup full-fat sour cream
- 2 teaspoons pure vanilla extract
- 1 teaspoon almond extract (optional, for that extra fragrance)
Instructions:
- Preheat your oven to 325°F (165°C). Make sure to grease and flour your bundt pan very well so the cake doesn't stick.
- In a large bowl, cream the butter and sugar together until the mixture is very pale and fluffy. This takes about 5 minutes, so be patient!
- Add the eggs one by one, beating well after each addition. This ensures the batter stays smooth.
- In a separate bowl, whisk the flour, salt, and baking soda.
- Add the flour mixture to the butter mixture alternately with the sour cream, beginning and ending with the flour. Mix on low speed just until combined—don't overmix or the cake will be tough.
- Stir in the vanilla and almond extracts.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 75 to 90 minutes, or until a toothpick inserted in the center comes out clean.
- Let it cool in the pan for 15 minutes before flipping it onto a wire rack. Let it cool completely before slicing. So yummy!
My Mind Patch: Sour Cream Butter Cake
Now, this second version is what I call my "mind patch" cake. Sometimes when I am feeling a bit stressed or just need a quiet moment, I go to my kitchen and bake this. It is a slightly different take on the sour cream butter cake, focusing on a very velvety texture that feels like a warm hug. It’s not too sweet, which is exactly how we like it, right? Just enough sweetness to go with a nice Oolong or Jasmine tea. This one uses a bit more vanilla and a slightly different mixing method to ensure the top gets a lovely golden crust while the inside remains super soft.
Ingredients:
- 1 cup unsalted butter (golden churn brand is very good for this!)
- 2 cups sugar
- 4 large eggs
- 2 cups cake flour (using cake flour makes it extra soft)
- 1 teaspoon baking powder
- ½ teaspoon salt
- ¾ cup sour cream
- 1 tablespoon vanilla bean paste (or extract)
Instructions:
- Preheat your oven to 350°F (175°C). Line a loaf pan or a square pan with parchment paper.
- Sift your cake flour, baking powder, and salt together twice. This adds more air to the cake.
- Cream the butter and sugar until very light.
- Add eggs one at a time, making sure each is fully incorporated before adding the next.
- Mix the vanilla bean paste into the sour cream.
- Fold in the flour mixture and the sour cream mixture in batches using a spatula. Be gentle! We want to keep the air in the batter.
- Transfer the batter to the pan and tap it on the counter once to remove large air bubbles.
- Bake for about 50-60 minutes. Check at 50 minutes with a skewer.
- Once baked, let it rest. This cake actually tastes even better the next day when the butter flavors have fully developed. Enjoy with your family!
