I don't know about you, but in this house, the slow cooker is my absolute best friend during the busy school season. Between soccer practice, music lessons, and trying to keep up with the laundry, I need recipes that are "set it and forget it" but still taste like I spent all day standing over a hot stove. Today, I’m sharing two of my absolute favorite ways to make chicken and noodles that will have your whole family asking for seconds—and maybe even thirds!

Crockpot Chicken and Noodles (Perfect Family Comfort Meal)

This first recipe is what I like to call "comfort in a bowl." It’s thick, creamy, and reminds me so much of the Sunday dinners my grandmother used to make, but with half the effort! It uses frozen egg noodles, which are the secret to getting that perfect, hearty texture that doesn't get mushy. My kids absolutely devour this, and it’s become a weekly staple in our household because it's just so easy to throw together in the morning before the chaos starts.

Ingredients:

• 1.5 lbs boneless skinless chicken breasts
• 2 cans (10.5 oz each) cream of chicken soup
• 1 stick (1/2 cup) unsalted butter, sliced
• 32 oz chicken broth (low sodium is best!)
• 1 teaspoon garlic powder
• 1 teaspoon onion powder
• Salt and black pepper to taste
• 24 oz bag frozen Reames-style egg noodles

Instructions:

• Place the chicken breasts at the bottom of your crockpot.
• Season the chicken with garlic powder, onion powder, salt, and pepper.
• Pour the cans of cream of chicken soup over the meat and top with the slices of butter.
• Add the chicken broth, covering everything completely.
• Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours.
• Once the chicken is tender, remove it from the pot and shred it with two forks.
• Return the shredded chicken to the crockpot and stir in the frozen egg noodles.
• Cover and cook on HIGH for another 45-60 minutes until the noodles are tender and the sauce has thickened beautifully.

It focuses on those deep, rich chicken flavors and uses a few extra aromatics to really bring the dish to life. I love serving this with a side of crusty sourdough bread or some honey-glazed carrots to round out the plate. It’s a total crowd-pleaser that never fails to satisfy a hungry crowd!

Ingredients:

• 2 lbs chicken thighs (boneless and skinless for extra flavor)
• 1 medium yellow onion, finely diced
• 2 stalks celery, chopped
• 4 cups chicken stock
• 2 chicken bouillon cubes
• 1/2 teaspoon dried thyme
• 1/2 teaspoon dried parsley
• 16 oz wide dried egg noodles
• 1/2 cup heavy cream (optional, for a silky finish)

Instructions:

• Add the diced onion and celery to the bottom of the slow cooker.
• Lay the chicken thighs over the vegetables and sprinkle with thyme and parsley.
• Drop in the bouillon cubes and pour the chicken stock over the top.
• Cook on LOW for 8 hours to ensure the chicken is incredibly tender.
• Remove the chicken, shred it into bite-sized pieces, and put it back into the pot.
• Turn the crockpot to HIGH and add your dried egg noodles.
• Cook for about 20-30 minutes until the noodles are al dente.
• If you want a bit of extra creaminess, stir in the heavy cream right before serving. Enjoy!
