These two dishes are very simple but taste so gourmet. They are perfect for a weekend lunch or a nice dinner when you want to impress your loved ones without spending the whole day in the kitchen. Roasted Tomatoes with Fresh Mozzarella, Basil, and Toasted Ciabatta
This first dish is a real favorite in my home because it is so crunchy and fresh. It is like a warm hug on a plate! The secret is to use really good olive oil and make sure your ciabatta bread is toasted just right so it can soak up all those delicious juices from the roasted tomatoes. When you bite into the creamy mozzarella and the crispy bread together, oh my, it is just heaven! My kids always ask for extra basil because it smells so fragrant. It is a very healthy choice too, full of good vegetables and fresh herbs. You can serve this as an appetizer or even a light main course on a sunny afternoon.
Ingredients:
- 2 cups of cherry tomatoes or grape tomatoes
- 3 tablespoons of extra virgin olive oil
- 3 cloves of garlic, minced very finely
- 1 teaspoon of balsamic glaze
- 8 ounces of fresh mozzarella cheese, sliced or torn into pieces
- A large handful of fresh basil leaves, torn
- 1 loaf of ciabatta bread, sliced thick
- Salt and black pepper to taste
Instructions:
- First, preheat your oven to 400°F (200°C). In a small baking dish, toss the tomatoes with the olive oil, minced garlic, salt, and pepper.
- Roast the tomatoes for about 15-20 minutes until they start to burst and look very juicy.
- While the tomatoes are roasting, grill or toast your ciabatta slices until they are golden brown and crispy.
- Once the tomatoes are ready, take them out and let them cool for just a minute. Place the fresh mozzarella on top of the warm bread, then spoon the roasted tomatoes and all their oil over the cheese.
- Drizzle with a little balsamic glaze and scatter the fresh basil leaves on top. Serve immediately while the bread is still warm!

This pasta dish is so clever because roasting the tomatoes creates a natural sauce that is much tastier than anything you can buy in a jar. It is very comforting and filling. I love how the little balls of mozzarella slightly melt into the warm pasta, creating these wonderful creamy pockets. It is a very colorful dish, too—the red, white, and green look so beautiful together, just like a celebration! It is a great way to make sure everyone eats their vegetables while still enjoying a hearty meal. Trust me, there will be no leftovers when you put this on the table!
Ingredients:
- 1 pound of your favorite pasta (penne, fusilli, or rigatoni work great)
- 3 cups of ripe tomatoes, chopped
- 1 small onion, thinly sliced
- 4 cloves of garlic, smashed
- 1/4 cup of olive oil
- 1 cup of fresh mozzarella pearls (bocconcini)
- 1/2 cup of grated Parmesan cheese
- A big bunch of fresh basil, chopped
- Red pepper flakes (if you like a little kick!)
Instructions:
- Start by heating your oven to 425°F (220°C). On a large sheet pan, spread out the tomatoes, onions, and garlic. Drizzle with olive oil and season with salt, pepper, and a pinch of red pepper flakes.
- Roast the vegetables for 20-25 minutes until the tomatoes are soft and slightly caramelized.
- While the veggies are roasting, boil a large pot of salted water and cook your pasta according to the package directions. Make sure to save a little bit of the pasta water before draining!
- In a large bowl, combine the hot pasta with the roasted tomato mixture. Toss it well so the juices coat every piece of pasta. If it looks a little dry, add a splash of that saved pasta water.
- Fold in the fresh mozzarella pearls and the Parmesan cheese. The heat from the pasta will make the mozzarella perfectly soft.
- Finish by stirring in the fresh basil and serve it hot to your hungry family!
