It’s basically a hug in a 9x13 dish, and it’s the perfect way to use up a rotisserie chicken when you’re in a pinch for time!

Ingredients:

• 12 oz wide egg noodles
• 3 cups shredded cooked chicken (rotisserie chicken works great!)
• 1 can (10.5 oz) cream of mushroom or cream of chicken soup
• 1 cup full-fat sour cream
• 1/2 cup whole milk
• 1/2 cup shredded sharp cheddar cheese
• 1 cup frozen peas and carrots
• 1 teaspoon garlic powder
• Salt and pepper to taste
• 1 cup crushed Ritz crackers
• 2 tablespoons melted butter

Instructions:

1. Preheat your oven to 350°F and lightly grease a large baking dish.
2. Cook the egg noodles in salted water according to the package directions, but aim for al dente since they will cook more in the oven. Drain well.
3. In a large mixing bowl, whisk together the sour cream, condensed soup, milk, garlic powder, salt, and pepper until smooth.

Ingredients:

• 1 lb rotini or bowtie pasta
• 1/2 cup sour cream
• 1/2 cup mayonnaise
• 2 tablespoons white vinegar or lemon juice
• 1 tablespoon fresh dill, finely chopped
• 1/2 teaspoon onion powder
• 1 cup English cucumber, diced
• 1/2 cup red bell pepper, diced
