Ingredients:
- 400g Spaghetti or Linguine
- 500g Large prawns, peeled and deveined (tails on)
- 6 cloves Garlic, minced finely
- 2 tsp Dried chili flakes (adjust to your heat level!)
- 1 can (400g) Crushed tomatoes
- 1 tbsp Tomato paste
- A handful of fresh parsley, chopped
- 3 tbsp Extra virgin olive oil
- Salt and black pepper to taste
Instructions:
- Bring a large pot of salted water to a boil and cook your pasta until it is just al dente. Don't overcook it!
- While the pasta cooks, heat olive oil in a large pan over medium heat. Add the prawns and cook for about 1-2 minutes per side until pink. Remove them and set aside so they stay tender.
- In the same pan, add your garlic and chili flakes. Sauté until the garlic is fragrant but not burnt—burnt garlic is bitter, so watch it closely!
- Stir in the tomato paste followed by the crushed tomatoes. Let it simmer for about 10 minutes until the sauce thickens and the flavors marry together.
- Toss the cooked pasta and the prawns back into the sauce. Add a splash of the pasta cooking water to make it silky.
- Finish with fresh parsley, a final crack of pepper, and serve immediately while it's piping hot!

- 350g Pasta (Fettuccine or Linguine works great)
- 400g Fresh prawns, cleaned

- 250g Cherry tomatoes, halved

- 1 tsp Dried oregano
- Fresh basil leaves for garnish
- 2 tbsp Butter for extra richness
- Salt and sugar to taste
Instructions:
- Cook your pasta in boiling salted water. Remember to scoop out a cup of the water before draining.
- In a wide pan, melt the butter with a little oil. Sauté the onions until they are soft and translucent.
- Add the garlic and cherry tomatoes. Cook them down until the tomatoes start to burst and release their juices.
- Pour in the tomato puree and oregano. If it looks too thick, add a little bit of that pasta water you saved. Add a tiny pinch of sugar to balance the acidity of the tomatoes.
- Add the prawns into the simmering sauce. They only need a few minutes! Once they turn opaque and curl up, they are ready.
- Fold in your cooked pasta and toss everything together until every piece is coated in that beautiful red sauce.
