Hello everyone! I know we usually love our rice and noodles for every meal, but sometimes, we really need a break from the usual routine. When the kids are asking for something different, or when you have too many vegetables in the fridge that you need to use before they go bad, pasta is the best answer. It is quick, it fills the stomach, and most importantly, it is very easy to make even after a long day at work. You don't need to spend hours in the kitchen to give your family a nutritious meal. Today, I want to share two wonderful pasta recipes that are full of veggies. They are healthy, colorful, and so delicious that even the pickiest eaters will ask for second helpings. Let’s get cooking!

Cheesy Penne Pasta Bake with Roasted Veggies

This first dish is a real lifesaver when you want something comforting but don't want to feel too guilty about all the cheese. The secret here is roasting the vegetables first. When you roast them, they get so sweet and flavorful, and they mix perfectly with the penne. It's much better than just boiling them! I like to use summer vegetables like zucchini and bell peppers because they add such a nice crunch. If you have some leftover broccoli or carrots, you can throw those in too—don't let anything go to waste! The cheese on top gets all bubbly and golden in the oven, making it look like you spent all afternoon in the kitchen when it actually only took a little bit of effort.

Ingredients:

• 1 box (16 oz) Penne pasta
• 2 medium zucchinis, chopped
• 2 bell peppers (any color), sliced
• 1 red onion, diced
• 3 cloves garlic, minced
• 2 cups shredded mozzarella cheese
• 1/2 cup grated parmesan
• 2 cups of your favorite marinara sauce
• 2 tablespoons olive oil
• Salt, pepper, and dried oregano to taste

Instructions:

1. Preheat your oven to 400°F (200°C). Toss your chopped zucchini, peppers, and onions with olive oil, salt, and pepper on a large baking sheet.
2. Roast the vegetables for about 15-20 minutes until they are tender and slightly charred.
3. While the veggies are roasting, boil a large pot of water and cook the penne until it is just "al dente" (don't overcook it, or it will get mushy in the oven!).
4. In a large bowl, mix the cooked pasta, the roasted vegetables, the marinara sauce, and half of the mozzarella cheese.
5. Transfer everything into a greased baking dish. Sprinkle the remaining mozzarella and parmesan on top.
6. Bake for 15 minutes until the cheese is melted and bubbling. Serve it hot while the cheese is still stretchy!

Pasta with Vegetables and Tomato Sauce

If you prefer something a bit more traditional and lighter, this pasta with tomato sauce is just the thing. It reminds me of the simple, hearty meals that bring the whole family together. Instead of using a plain sauce from a jar, we add lots of fresh vegetables to make it thick and satisfying. It’s a great way to make sure everyone gets their daily serving of greens. If your family likes a bit of heat, you can add a pinch of chili flakes—it really wakes up the flavors! This dish is perfect for a Meatless Monday or any night when you want a meal that feels "clean" and homemade. Plus, the leftovers taste even better the next day for lunch!

Ingredients:

• 12 oz of your favorite pasta shape (fusilli or rigatoni works well)
• 1 can (28 oz) crushed tomatoes or tomato purée
• 1 large eggplant, cubed
• 1 yellow squash, sliced
• 1 cup frozen peas or fresh spinach
• 1 small onion, finely chopped
• 2 tablespoons tomato paste
• Fresh basil leaves for garnish
• Olive oil, salt, and a pinch of sugar to balance the acidity

Instructions:

1. Start by sautéing the onions in olive oil until they are soft and translucent. Add the cubed eggplant and squash, cooking until they start to soften.
2. Stir in the tomato paste and cook for 2 minutes to deepen the flavor.
3. Pour in the crushed tomatoes and add a pinch of salt and sugar. Let the sauce simmer on low heat for about 20 minutes so the flavors can marry together.
4. Meanwhile, cook your pasta in salted boiling water until tender.
5. Five minutes before serving, stir the peas or spinach into the sauce.
6. Toss the pasta directly into the sauce pan so every piece is coated. Garnish with fresh basil and enjoy your beautiful, healthy meal!
