Aiya, it is such a struggle every single day! But I found the secret—you just have to add a lot of cheese and turn it into a pasta bake. This cheesy broccoli pasta bake is so delicious and so "shiok," even the pickiest eaters will ask for second helpings. It is the perfect comfort food for a busy weeknight when you are tired from work but still want to put a hot, home-cooked meal on the table. It’s budget-friendly too, so you can save your money for other things. Trust me, once you smell this coming out of the oven, everyone will be running to the dining table!
Golden Crust Cheesy Broccoli Pasta Bake
Look at this one, it’s so beautiful! This recipe gives you that perfect golden-brown crust on top that everyone fights over. I like to use a strong cheddar cheese because the flavor is much better. When you are boiling the pasta, remember don't cook it too long because it will cook more in the oven. Nobody likes soggy pasta, right? Keep it a bit firm, and it will be just perfect after baking.
Ingredients
- 350g Penne or Macaroni pasta (any shape you like, really!)
- 1 large head of broccoli, cut into small bite-sized florets
- 50g Unsalted butter
- 50g Plain flour
- 600ml Full cream milk (for extra richness)
- 250g Sharp cheddar cheese, grated (save some for the top!)
- 1 teaspoon Mustard (optional, but it makes the cheese taste better)
- Salt and black pepper to taste
- A pinch of nutmeg if you have it in the cupboard
Instructions
- First, preheat your oven to 200°C. Get your big baking dish ready.
- Boil a large pot of salted water. Add your pasta and cook for about 8 minutes. In the last 3 minutes of boiling, throw in the broccoli florets. Drain it all together and set aside.
- While the pasta is boiling, let's make the sauce. Melt the butter in a pan over medium heat, then stir in the flour. Cook it for 1 minute until it smells toasted.
- Slowly pour in the milk, whisking all the time so you don't get any lumps. Keep stirring until the sauce becomes thick and bubbly.
- Take the pan off the heat and stir in most of the cheese, mustard, salt, and pepper. Stir until the cheese is all melted and smooth.
- Mix the cooked pasta and broccoli into the cheese sauce. Make sure every piece is covered!
- Pour everything into your baking dish and sprinkle the remaining cheese on top.
- Bake for 20 minutes until the top is golden and bubbling. Serve it hot and enjoy!
Extra Creamy Broccoli Pasta Delight
Now, if you like your pasta very, very creamy, this version is the one for you. It’s so silky and smooth! I like to add a little bit of garlic powder or even some fried garlic on top to give it that extra "oomph." It is so comforting on a rainy day. Make sure you cut the broccoli quite small so it mixes well with the sauce. This is such a good way to use up whatever cheese you have in the fridge—don't let anything go to waste!
Ingredients
- 400g Fusilli or spiral pasta (the sauce sticks to the spirals so well!)
- 2 cups Broccoli florets
- 40g Butter
- 2 cloves Garlic, minced finely
- 3 tablespoons All-purpose flour
- 500ml Milk
- 1 cup Mozzarella cheese (for that long cheese pull!)
- 1/2 cup Parmesan cheese, grated
- 1/2 teaspoon Garlic powder
- Salt and pepper for seasoning
- Red chili flakes (if you like a little bit of spice like I do!)
Instructions
- Start by boiling your pasta in a big pot of water. Add the broccoli during the last few minutes so it gets tender but not mushy. Drain and keep it aside.
- In a saucepan, melt the butter and add the minced garlic. Fry it until it’s fragrant but don't let it burn!
- Add the flour and stir for a minute. Slowly add the milk while whisking constantly. You want a very smooth sauce.
- Once the sauce is thick, add the garlic powder, salt, pepper, and the parmesan cheese. Stir until the cheese disappears into the sauce.
- Combine the pasta and broccoli with this creamy sauce. Stir it gently so you don't break the broccoli.
- Transfer the mixture into a baking tray. Cover the whole thing with the mozzarella cheese.
- Put it in the oven at 190°C for about 15 to 20 minutes. You want the cheese to be melted and starting to turn brown.
- If you like, sprinkle some chili flakes on top before serving. It gives a nice little kick that balances the creamy cheese perfectly. So good!
