I used to reach for a jar of store-bought pasta sauce because it was just easier, but lately, I’ve been trying to lean into more wholesome, homemade options that don't take all day to simmer. That’s exactly why I am head-over-heels in love with my Instant Pot. It is a total game-changer for busy families who still want that authentic, slow-cooked flavor without the four-hour wait. Today, I’m sharing two of my absolute favorite ways to whip up a batch of red sauce that will make your kitchen smell like a dream and leave your family asking for seconds.
Classic Instant Pot Tomato Sauce
This first recipe is my absolute go-to for those nights when I realize I have nothing in the pantry but a few cans of tomatoes and some dried herbs. It is thick, savory, and has that deep, rich flavor that usually requires a grandma standing over a stove all afternoon. I love to make a big batch of this on Sunday and freeze half of it for later in the month. It’s perfect over spaghetti, but honestly, it makes a killer dipping sauce for some cheesy garlic bread too! You won't believe how the pressure cooker marries these flavors together in such a short amount of time.
Ingredients:
- 2 tablespoons extra virgin olive oil
- 1 medium yellow onion, finely diced
- 4 cloves garlic, minced
- 2 (28-ounce) cans crushed tomatoes
- 1 tablespoon tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon red pepper flakes (optional, for a little kick!)
- Salt and black pepper to taste
- A pinch of sugar to cut the acidity
Instructions:
- Set your Instant Pot to the "Sauté" function and add the olive oil. Once hot, add the diced onion and cook until translucent, about 3-4 minutes.
- Add the minced garlic and cook for another minute until fragrant, being careful not to burn it.
- Stir in the tomato paste, then pour in the crushed tomatoes. Add the oregano, basil, red pepper flakes, salt, pepper, and that little pinch of sugar.
- Give everything a good stir, then secure the lid and set the valve to the "Sealing" position.
- Select "Manual" or "Pressure Cook" on High for 20 minutes.
- Once the timer goes off, allow for a natural pressure release for at least 10 minutes before venting the remaining steam.
- Stir the sauce and serve immediately, or use an immersion blender if you prefer a perfectly smooth texture!
Fresh Summer Garden Tomato Sauce
Now, if you’re lucky enough to have a garden overflowing with ripe tomatoes, or if you just spent a lovely Saturday morning at the local farmers market, this next recipe is for you. There is something so incredibly special about using fresh, sun-ripened tomatoes. This sauce is lighter and more vibrant than the canned version, and it really captures the essence of summer. It feels so clean and healthy, and I love knowing exactly what went into the pot. It’s a great way to use up those Romas or San Marzanos that are just begging to be turned into something delicious!
Ingredients:
- 3-4 pounds fresh tomatoes (Roma or Plum work best), cored and halved
- 3 cloves garlic, peeled and smashed
- 1/4 cup fresh basil leaves, torn
- 2 tablespoons olive oil
- 1 teaspoon sea salt
- 1/2 teaspoon cracked black pepper
- 1 tablespoon balsamic vinegar (my secret ingredient!)
Instructions:
- Place the halved tomatoes, smashed garlic, olive oil, salt, and pepper into the Instant Pot. You don't even need to add water—the tomatoes will release plenty of juice!
- Lock the lid and set the pressure release valve to "Sealing."
- Cook on High Pressure for 15 minutes.
- Perform a quick pressure release once the cooking cycle is complete.
- Carefully open the lid and stir in the fresh basil and balsamic vinegar. The balsamic adds such a beautiful depth of flavor that really makes the fresh tomatoes pop.
- Using an immersion blender, blend the sauce directly in the pot until it reaches your desired consistency. If it's a bit too thin, you can run the "Sauté" function for a few minutes to thicken it up.
- Taste and adjust seasoning as needed, then toss with your favorite pasta and enjoy that fresh-picked taste!
