Look at these colors! They are so vibrant and full of life, just like a beautiful garden. This fruit dessert is very cooling for the body, especially during the hot weather. It is also very high in vitamins, so you can feel very good about serving it to your little ones. The combination of the different textures—the soft fruit and the creamy base—is just wonderful. You can use any fruits you have at home, but I recommend choosing colors that look very auspicious together, like red, green, and gold. It is so pretty to look at!
Ingredients:
- 2 cups of mixed fresh berries (strawberries, blueberries, and raspberries)
- 1 large ripe mango (make sure it is very sweet and fragrant)
- 2 pieces of kiwi fruit, peeled and sliced
- 500g of light Greek yogurt or chilled whipped cream
- 2 tablespoons of organic honey or agave syrup for natural sweetness
- A few sprigs of fresh mint leaves for a lovely garnish
- Optional: A handful of crushed digestive biscuits or granola for some crunch
Instructions:
- First, wash all your fruits very carefully under cold water. It is important to make sure everything is clean and fresh for your family.
- Cut the mango and kiwi into small, bite-sized cubes. If using strawberries, slice them thinly so they look very delicate.
- Take your most beautiful glass cups. If you want to add a bit of crunch, put a small spoonful of crushed biscuits at the very bottom.
- Add a generous layer of the yogurt or whipped cream. Smooth it out with a small spoon so it looks very neat from the outside of the glass.
- Carefully place a layer of your colorful fruits on top of the cream. Try to arrange them so the colors contrast nicely—put the green kiwi next to the red strawberries!
- Repeat the layers until the glass is nearly full, finishing with a beautiful arrangement of fruit on the very top.
- Drizzle a little bit of honey over the fruit to give it a nice shine and extra sweetness.
- Place a mint leaf on top for a professional touch. Chill in the refrigerator for at least 30 minutes before serving so it is very cold and refreshing.
Velvety Creme Fraiche Orange Curd Topping
This second recipe is something very special that my friends always ask for. It is a very smooth and silky orange curd mixed with creme fraiche. The citrus aroma is so bright and uplifting! It is perfect for those who like a dessert that is a little bit tangy and not too heavy. You can serve this on top of a simple sponge cake, or even just enjoy it by itself with a small spoon. It is also very good for the digestion after a heavy dinner because of the fresh orange juice. Please try this, it is so delicious!
Ingredients:
- 3 large, juicy oranges (we will use both the zest and the fresh juice)
- 1 lemon (just for a little bit of extra tang)
- 3 large farm-fresh eggs
- 150g of fine granulated sugar
- 100g of unsalted butter, cut into small cubes at room temperature
- 200ml of chilled creme fraiche
- A pinch of salt to balance the flavors
Instructions:
- Begin by zesting your oranges and lemon. Be very careful to only take the colorful part of the skin and not the white part, as the white part can be a bit bitter.
- Squeeze the juice from the oranges and lemon until you have about 1 cup of fresh juice.
- In a heat-proof glass bowl, whisk the eggs and sugar together until they are well combined and a little bit pale.
- Stir in the citrus juice, the zest, and the pinch of salt.
- Place the bowl over a pot of simmering water (this is called a double boiler). Make sure the bottom of the bowl does not touch the water. We must be very patient and gentle!
- Whisk the mixture constantly for about 10 to 15 minutes. You will see it slowly start to thicken into a beautiful, glossy curd.
- Once it is thick enough to coat the back of a spoon, remove it from the heat and stir in the butter cubes one by one until the mixture is very smooth.
- Let the curd cool down completely. Once it is cold, gently fold in the creme fraiche. This makes it so light and airy!
- Serve this in small bowls or as a topping for your favorite cakes. It is truly a taste of sunshine!
