Crispy Onion and Tomato Chicken – My Favourite Pastime
This first dish is a real winner because it has that wonderful crunch we all love, combined with the juicy, tangy sweetness of fresh tomatoes. In our busy lives, we need something that is "ho chi" (delicious) but also easy to put together. The secret here is to make sure the chicken is nice and crispy before you add the sauce. My grandmother always told me that the balance of acidity from the tomato and the sweetness of the fried onions is what makes a dish truly special. It goes so well with a big bowl of steaming hot jasmine rice to soak up all those beautiful juices!
Ingredients
- 4 large chicken thighs (bone-in or boneless, up to you!)
- 2 large white onions, thinly sliced
- 3 ripe tomatoes, chopped into chunks
- 3 cloves of garlic, minced (don't be stingy with the garlic!)
- 1 tablespoon of ginger, finely grated
- 1/2 cup cornstarch or all-purpose flour for coating
- 2 tablespoons of soy sauce
- 1 tablespoon of oyster sauce
- Salt and white pepper to taste
- Cooking oil for frying
- Fresh cilantro for garnish
Instructions
- First, clean your chicken and pat it very dry with a paper towel. Season it well with salt and white pepper.
- Coat each piece of chicken thoroughly in the cornstarch. Shake off the excess—we want a light, crispy coat, not a heavy batter!
- Heat a generous amount of oil in a wok or large pan. Fry the chicken until it is golden brown and crispy on both sides. Remove and let it rest on a wire rack.
- In the same pan, leave about two tablespoons of oil. Throw in your sliced onions and sauté until they start to soften and turn slightly brown.
- Add the garlic and ginger, and fry until you can smell the wonderful aroma filling your kitchen.
- Toss in the chopped tomatoes. Stir them around until they start to break down and release their juices, creating a thick, rustic sauce.
- Stir in the soy sauce and oyster sauce. If it looks too dry, add a small splash of water.
- Place the crispy chicken back into the pan for just a minute to let it catch the sauce, but don't let it sit too long or it will lose its crunch!
- Garnish with fresh cilantro and serve immediately while it is piping hot.
CARAMELIZED FRENCH ONION CHICKEN
Now, this second recipe is a bit more western in style, but the flavors are so rich and comforting that every Asian household will love it. We call this "comfort food" at its best. It uses the natural sweetness of caramelized onions—and you must be patient with the onions! Do not rush them. If you cook them slowly, they turn into brown gold. This dish is savory, slightly sweet, and very "atas" (fancy) enough for a Sunday dinner or when you have guests coming over. Your neighbors will be knocking on your door asking what smells so good, I promise you!
Ingredients
- 3 large yellow onions, sliced into thin rings
- 4 chicken breasts or thighs (skinless)
- 2 tablespoons of unsalted butter
- 1 tablespoon of olive oil
- 1 cup of beef or chicken broth
- 1 teaspoon of dried thyme
- 1 cup of shredded Gruyere or Mozzarella cheese
- Salt and black pepper to taste
- A splash of balsamic vinegar (the secret ingredient!)
Instructions
- Start by melting the butter and oil in a large oven-safe skillet over medium-low heat.
- Add all your sliced onions. Now, this is the part where you need patience! Stir them every few minutes for about 20 to 30 minutes until they are a deep, dark jammy brown. Add a tiny bit of water if they stick.
- Once the onions are caramelized, stir in the balsamic vinegar to deglaze the pan. Scoop the onions out and set them aside in a bowl.
- Season your chicken with salt, pepper, and thyme. In the same skillet, turn the heat up to medium-high and sear the chicken until it is nicely browned on both sides (about 3-4 minutes per side).
- Pour the broth into the pan around the chicken, then pile those beautiful caramelized onions right on top of the chicken pieces.
- Cover the pan and let it simmer for about 10 minutes until the chicken is cooked through and tender.
- Sprinkle the shredded cheese over the top. If your pan is oven-safe, put it under the broiler for 2-3 minutes until the cheese is bubbly and brown. If not, just cover the pan with a lid for a few minutes until the cheese melts.
- Serve this with some crusty bread or even some mashed potatoes to enjoy every drop of that onion gravy.
